Tribal kitchen day! 🌴The need to clean up my diet, clear my mind, be more connected to my amazing life...makes me realize I need more than a two recipe repertoire (had to look up how to spell that one!) if I'm gonna avoid...er, cut down on...quick sweet snacks and Puerto Rican food trucks. So thanks to my abundant free time I hit my primal outdoor kitchen. Opened an old coconut with a hammer, grated the meat, soaked in hot water to squeeze out the milk (thanks @ranchomastatal for the skills;) Added that to a stew of chayote, malanga, black beans, to eat with local greens and avocado mixed in. The leftover coconut meat went into a gluten free plantain bread, made with sunflower butter and local eggs instead of flour...cooked in the toaster oven, after roasting the raw cocoa beans from Jeff at the farmers market (which will be my no sugar pick-me-up that won't melt all over my car.) Super rewarding, and sometimes feeling healthy is enough effort and accomplishment a day needs! ...But I think I'll upgrade my kitchen kit to have a machete and a blender soon. . . . . . #guthealth #islandlife #puertorico #shacklife #outdoorliving #eatfromtheearth #outdoorkitchen #caribbean #glutenfree #ranchomastatal #tropicaltreehouse #rinconpr #mentalhealth #womenwhotravel #womenwhowrite
I'd go to the beach party, but I'm so insecure about my mole...
First visitor in the shack! @glide________ luxuriating in my guest accommodations...foam pad on the floor of my porch...mosquito net with only a couple holes. Tonight he even gets a fan! Pray it doesn't rain...I'm just trying to convince him to help me build a loft;) . . . . #shacklife #islandlife #tinyhome
Becoming an honorary Puerto Rican. . On the drive to the eye doctor, I swerved my little red Suzuki around potholes and manholes buried so deep with layers and years of road repairs that one good hit could likely burst the old girl’s ball joints in half. . Few of the other drivers seemed to mind. They swerved in kind, or slowed down if the road narrowed too much to pass comfortably. No one waved, no one swore, no one honked. Driving is an art here in Puerto Rico. And we’re all in it together. . New short story on my blog. #linkinbio
